It contains inactive yeast, so it can be consumed by people with candida!

Similar to brewer's yeast, Nutritional yeast is produced by fermentation of "Saccharomyces Cerevisiae", but instead of malted barley, it is grown on enriched, purified cane and beet molasses under carefully controlled conditions.

Nutritional yeast is a naturally occurring source of protein as well as a number of vitamins and trace elements. It is the best natural source of the vitamin B complex.

The vitamin content of Nutritional yeast is higher than that of normal brewer's yeast.

Nutritional yeast does not have the harsh, intense bitter taste of the brewer's yeast, which is a by-product of the brewing industry, it has a lighter, pleasant, savoury taste instead.
Nutritional yeast is an ideal flavouring for almost any dish.

Nutritional yeast vs Brewer’s yeast

Nutritional yeast is produced by using the yeast species known as Saccharomyces cerevisiae. This is the same type of yeast used for baking bread and for brewing beer. Although brewer's yeast, baker's yeast and Nutritional yeast are technically made from the same type of yeast, they are very different products.

Traditional brewer's yeast is the living active yeast used to make beer, which is then destroyed by heat and converted into a food supplement.
Nutritional yeast on the other hand, is a deactivated yeast grown solely for its nutritional content.

Although both Nutritional yeast and traditional brewer's yeast are derived from the same species, they have surprisingly different nutritional profiles. The reason for this lies in the way each product is produced.

Both products are produced using Saccharomyces cerevisiae, a single-celled fungus more commonly known as yeast. Unlike in baker's yeast, these microorganisms are inactivated in brewer's yeast, which means they will not cause yeast overgrowth in the human body.

  • Baker’s yeast: Baker's yeast is an organic live yeast and used as a leavening agent to bake bread. The yeast is destroyed during baking, but gives the bread an earthy, yeasty taste.
  • Brewer’s yeast: Brewer's yeast is an organic live beer yeast used in beer production. The dead yeast cells left after brewing can be consumed as a nutritional supplement, but they taste very bitter.
  • Nutritional yeast: This yeast is grown specifically to be used as a food product. The yeast cells are killed during manufacturing and not alive in the final product. It is used in cooking and has a cheesy, nutty or savory flavor.

To produce the Nutritional yeast, S. cerevisiae cells are cultured for several days on a sugar-rich medium such as molasses. [03.]

Nutritional yeast is normally sold as flakes, granules or powder. It has a bright yellow colour and a savoury taste. It’s an excellent source of protein, fibre and vitamins B. Vitamin B12 is mainly found in animal products, especially meat and dairy products, so for those who avoid eating animal products, B12 may be particularly important. Not having enough B12 can lead to anemia and other health conditions.

When is it not recommended?

Nutritional yeast is considered safe for most people, but in some cases it is not recommended. People with inflammatory bowel disease, especially Crohn's disease, may have an immune reaction that can lead to inflammation.

Some research suggests that tyramine (a building block of the protein) found in Nutritional yeast may trigger headaches or migraines in certain individuals.

If you must avoid Nutritional yeast, there are plenty of other ways to get sufficient vitamin B12, one of those is eating fermented foods.

Brewer's yeast:

As the name suggests, brewer's yeast is usually grown on malting barley or other grains used for brewing beer. After the beer brewing is over, yeast is separated from the liquid and dry milled using roller mills. This process inactivates or "destroys" the yeast cells.

The substrate used tends to make these yeasts taste more bitter. Many products undergo a “debittering” process to make them more flavoursome.
Brewer’s yeast comes in powder, flakes or capsules.

Nutritional yeast:

Unlike brewer's yeast, Nutritional yeast is always primarily cultivated, which means it is produced specifically for use as a food supplement.

The most common medium for the production of Nutritional yeast is beet and cane molasses. Both are cheap by-products of the sugar industry and provide plenty of glucose for the yeast.

Often, additional synthetic nutrients are added to the substrate to produce a more robust, nutritionally-dense final product.

Nutritional yeast is a natural source of Beta-Glucan

Nutritional yeast also contains two major carbohydrates: alpha-mannan and beta-glucan. [04.]

Studies have shown that when added to feed, alpha-mannan and beta-glucan can reduce the incidence of infections caused by pathogenic bacteria such as E. coli and Salmonella in pigs as well as reduce the growth of tumours in mice.

Beta glucan and alpha mannan help protect against infections in several ways:

  • They prevent pathogenic bacteria from adhering to the intestinal mucosa.
  • They stimulate the immune cells so they can fight infection more effectively.
  • They bind to certain types of toxins produced by yeasts in food plants and reduce their harmful effects.
